You have to start by looking at the numbers. Your numbers are a very critical part of your success. There might be a space full of smiling faces out front, but the numbers might be saying a different story.

If the numbers are down, there might be a good reason for it. You need to investigate things. Ask your customers if they are really enjoying their experience. Find out if they have any tips on improvement. Believe it or not, your customer’s opinion do count for something. If it weren’t for your customers, you wouldn’t have anyone. Always keep this in mind.

Your books are not just for tax purposes or audits. They are for keeping track of everything from your menu performance to your employee’s performance records. You also need to be looking at your prime cut evaluations. Take a look at all your total costs going out.

These are all things that need to be considered. Just one thing can lend to poor sales and reviews. It often times is in the last place you look. Which is exactly why you need to be looking at everything.

In order for your eatery to be a success, you need to cut the strings of anything that is bringing it down. Trimming the fat will give you a much better picture of what is really going on.
