Find out if they have any tips on improvement. Believe it or not, your customer’s opinion do count for something. If it weren’t for your customers, you wouldn’t have anyone. Always keep this in mind.

Your books are not just for tax purposes or audits. They are for keeping track of everything from your menu performance to your employee’s performance records. You also need to be looking at your prime cut evaluations. Take a look at all your total costs going out.
